Apart from Peking Duck and Duck à l'Orange we don't,
perhaps, eat duck very much in this country. A lot of peple think it can be too fatty. But the key to cooking duck
is to cook it fast, in the oven, on a high heat. This will bring out the fat which you can use to roast potatoes
(delicious).

There are so many things you can do with pork. It makes a testy roast on its own but you can use it for stir
fry, have spare ribs on your barbeque or cook it to have cold later. If you are cooking a roast and some of the
